Simon Dolinky

Simon Dolinky is the Vice President of Food and Beverage for Seattle-based Columbia Hospitality and brings more than 25 years of experience in restaurant, hotel, resort, event center, and bar operations. He has created dozens of concepts and overseen every stage of a restaurant’s life cycle—from ideation to implementation—including concept development, budgeting, menu creation, and kitchen and bar design. Simon has led restaurant openings and trainings across the U.S., Canada, Mexico, and the Caribbean.

Growing up in Wisconsin, he was a frequent visitor to the Dane County Farmers’ Market in Madison, the largest producers-only market in the United States. That experience shaped his appreciation for seasonal, high-quality ingredients and his honest, authentic approach to hospitality.
